Grilled Shrimp Foil Packets
Ingredients:
(for each foil packet)
- 4-5 large shrimp
- 1 small clove of garlic, minced
- 1/2 cup of smoked andouille sausage, sliced
- 1/2 cup of corn
- 1 1/2 cups of chopped potatoes
- 1 cup of mixed chopped zucchini and summer squash and/or green beans
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp old bay seasoning
- 1/2 tsp garlic salt
- 1/2 tsp parsley
- Salt and pepper to taste
- 1 lemon wedge
- Preheat grill over high heat
- Cut one sheet of foil about 12 - 15 inches long. Place the shrimp, garlic, sausage, corn and potatoes on it and drizzle with olive oil. Add the old bay seasoning and salt and pepper to taste. Toss gently to combine. Top the mixture with parsley, butter and a lemon wedge (optional).
- Fold the foil crosswise over the mixture so it is completely covered. Roll the top and bottom edges to seal they closed.
- Place the packets on a grill and cook until the mixture is just cooked through, about 10 - 15 minutes.
- Serves immediately.
