Marinated Zucchini Pasta
Ingredients
2 Tbsp of olive oil plus 1 1/2 for separate use
2 cloves of garlic
1 pound (about 2 medium) zucchinis
1 1/4 tsp of salt
3 medium tomatoes, seeded and diced
1/4 cup of chopped fresh basil
3/4 tsp of pepper
2 Tbsp of wine vinegar
1/2 pound of pasta
2 Tbsp of olive oil plus 1 1/2 for separate use

3/4 tsp of pepper
2 Tbsp of wine vinegar
1/2 pound of pasta
- In a large frying pan heat the 2 Tbsp olive oil. Add the garlic zucchini and 1/4 teaspoon salt
- Cook, stirring occasionally, until tender. Transfer the zucchini into a stainless steel or glass bowl.
- Stir in the tomatoes, basil, vinegar, remaining salt to taste and pepper.
- In a large pot of boiling water cook pasta for about 15 minutes, or until done
- Drain and stir in zucchini mixture with 1 1/2 tbsp of olive oil. Serve warm.
