BAKED Zucchini BOATS
Ingredients
1 large zucchini
1 cup rice
1 pound ground beef
1 onion
1 green pepper
2 cups tomato sauce
1 tsp sugar
Shredded mozzarella cheese
Salt and pepper to taste

- Cook the rice according to package directions
- Cut the zucchini in half length wise and scoop out the seeds and flesh leaving 1/2"-1" of flesh to support the sides. Save 1 cup of the scooped out zucchini
- Brown the ground beef along with the onions and green peppers
- Add the 1 cup of zucchini, cooked rice, tomato sauce, and sugar to the beef
- Salt and pepper to taste
- Let simmer for 10 minutes
- Put the zucchini boats in a baking dish and fill with stuffing mixture.
- Cover with foil
- Bake for 45 minutes at 350 degrees
- Remove from oven and cover the tops with shredded mozzarella cheese
- Bake uncovered for 5 minutes or until the cheese is melted
