Breakfast Muffins

Note: These freeze very well and reheat beautifully in the microwave.
Ingredients
- 1 1/4 cups egg substitute, or 5 eggs
- 1/2 cup feta or other favorite cheese
- 10 ounces frozen chopped spinach or 10 ounces chopped fresh spinach (I'm going to try the Swiss chard instead)
- 1/3 cup finely chopped onion
- 1 cup chopped veggies, your choice: asparagus, bell peppers, zucchini, tomato...
- 1 teaspoon salt
- Preheat oven to 350.
- Generously spray 12 cup muffin pan with cooking spray (or use paper liners, also sprayed with cooking spray).
- Combine all ingredients until well mixed. Divide mixture between 12 muffin cups.
- Bake 20 to 22 minutes in preheated oven until set. Remove and let stand 10 minutes before serving.
