Cooked Beat Greens

Beat Greens (remove heavy stems and discard)

- Swirl beet greens in a sink (or bowl) of cold water to remove sand.
- Place wet beet greens in a pot. (Water on the rinsed leaves will provide moisture for steaming.)
- Cover and cook over medium heat until the greens are wilted, approx. 3 - 5 minutes. (Beet greens cook quickly, so be careful not to overcook).
- Remove cooked beet greens to a serving bowl and season with butter, salt, and pepper to taste.
