Roasted Beet slices
Ingredients:
Small or medium beets, scrubbed and sliced
Extra-virgin olive-oil
Salt & pepper (optional: thyme)

- Preheat oven to 450°F.
- Cut tops and bottoms off beets and slice into rounds.
- Toss with olive oil, salt, pepper and thyme if desired.
- Spread beets in single layer on baking sheet.
- Roast until beets are soft and slightly shrunken, (approx. 25 min.) turning halfway through.
