Herb Roasted Summer Vegetables
Ingredients
- 1 medium summer squash
- 1 medium zucchini
- 3 large red skin potatoes
- 12 cherry tomatoes (keep whole)
- 5 carrots
- 2 1/2 Tbs fresh, chopped basil
- 1 Tbs rosemary
- 1/2 Tbs Montreal steak seasoning
- 2 cloves of garlic
- 3/4 Tbs onion salt
- Salt and pepper to taste
- Olive oil to evenly coat everything
- Preheat the oven to 425
- Cube all the vegetables (except cherry tomatoes) to roughly the same size
- Pour olive oil and all the seasoning on top
- Toss it until everything is evenly coated with olive oil and the seasonings
- Place everything in a 9 x 13 glass baking dish
- Cover with foil and bake for about 30 minutes
- Uncover and bake for 10-15 more minutes until it reaches desired tenderness
