Pork and acorn squash
Ingredients:
2 acorn squash cut in half lengthwise
1-1/2 to 2 lbs pork sausage. Hot, mild or combination
4 tablespoons butter
4 tablespoons brown sugar
1 small onion, chopped

- Remove seeds and stringy fiber from each squash half
- Deeply score the flesh of the squash in a checkered pattern, but do not puncture the skin
- Place 1 tablespoon of butter and brown sugar on each half and microwave for 5 minutes
- Mix pork sausage with onion and form into 4 balls, place one in the center of each squash half
- Place squash on a baking sheet or dish and bake at 350 for 1 hour and 15 minutes or until pork is cooked through and squash is tender
